Bistek Tagalog



in the mood to cook, so i took out the filipino steak from the freezer this morning and let it thaw for a few hours. after lunchtime, it had thawed through at room temperature and i washed it in running water to remove the blood, sliced the meat in manageable rectangles, then arranged them in a collander to drain. about an hour later, while my bff, tata, was waiting for me, i took the moist meat and seasoned it with salt and pepper and a little canola oil, then marinated it in maggi savor kalamansi. then i let it stand while tata and i went swimming in the pool.

after the swim, tata and i had dinner at the bacolod chicken house express. then i bought some veggies at shopwise before going back home to check on the marinating beef.

the meat had absorbed most of the marinade so i knew it was ready for the frying pan.




i heated up some canola oil in my non-stick pan and arranged the marinated beef slices in a circle. i let the meat cook through around 5 minutes each side or until brown.




then i added water to the remaining marinade and added it to the pan to deglaze the bottom. i allowed the beef to boil in the marinade until it was reduced to the consistency of a sauce.



then i arranged some sliced white onions in the center of the pan and browned them on both sides.





after the onions were cooked, i took the pan off the fire and let the beefsteak cool for a while before arranging the cooked slices with the onions in a food container. then i poured the sauce over the meat, ready for lunch at work the next day.
